- 1 large bunch of curly kale
- 1-1.5 cups Best Beans in the Med, according to taste (½ - ¾ of a large container)
- 1 cup Pomegranate seeds
- 1.5 teaspoons lemon juice
- Salt and pepper to taste
- Optional: additional chopped pistachios as a garnish
Instructions:
- Wash the kale leaves thoroughly and pat them dry with a clean kitchen towel or spin them dry in a salad spinner.
- Remove the tough stems and tear the leaves into bite-sized pieces.
- Place the torn kale leaves in a large mixing bowl. Drizzle olive oil, lemon juice, and a dash of salt and pepper over the kale.
- With clean hands, gently massage the kale for about 2-3 minutes. (Massaging helps to break down the toughness of the leaves, making them softer, tastier, and more digestible!)
- Let the massaged kale sit in the fridge for 30-60 minutes to soften even more.
- Mix a tablespoon of warm water into the Best Beans in the Med to soften the mixture
- Add Best Beans in the Med to the bowl of massaged kale and toss.
- Add pomegranate seeds to the bowl and toss again until all ingredients are well combined.
- If you’d like, add a few more chopped pistachios to the top as a garnish and serve!
