Drain tofu and pat dry. (No need to press!) Cut into cubes, fingers, or whatever shape you like.
Place tofu on baking sheet and coat with extra-virgin olive oil. Since the tofu is a bit delicate, we suggest pouring the olive oil over the top and working it onto all sides of the tofu pieces with your fingers.
Bake for 15-20 minutes. Halfway through, flip the cubes with a spatula. If they are sticking to the sheet, work the edge of the spatula beneath them to preserve the crispy skins.
